One evening, Aai was serving dinner.
I looked at the plate and smiled.
Me: “Aai, lagta hai aaj kal ghar ki rasoi ka competition badh gaya hai.”
She looked up immediately.
Aai: “Competition? Rasoi ka? Kis se?”
Me: “Socho…” Pehle sirf ghar ka khana hota tha.
Aai: “Haan… aur usme kya problem thi? Swaad bhi… Sehat bhi… Budget bhi.”
Me: “Phir restaurants aaye.”
Aai: “Haan, tab bahar khaana occasion hota tha.”
Birthday. Anniversary. Guests.
Me: “Phir restaurants ghar ke andar aa gaye.”

She looked confused.
“Matlab?”
Me: Air fryer / Coffee machine / Pizza oven / Pasta maker / Sandwich maker.
Restaurant-style recipes.
She laughed.
“Achha… kitchen ne bhi upgrade maar liya.”
Me: “Phir food delivery aa gayi.”
Aai: “Haan… ab toh phone uthao aur khaana ghar aa jaata hai.”
I nodded.
“And now…”
“People invite chefs home.”
“Home dining.”
“Chef’s table.”
“Private food experiences.”
Food has become much more than food.
She paused. Then smiled.
“Pehle pet bharna tha… ab Instagram bhi bharna hai.” 😄
I laughed.
“But Aai… Yahan ek interesting baat hai.”
“When restaurants came… people said home cooking would disappear.”
“It didn’t.”
“When delivery apps came… people said restaurants would disappear.”
“They didn’t.”
“Now home chefs are growing.”
“Restaurants won’t disappear either.”
She stopped cutting vegetables.
“Toh phir competition hai kis baat ka?”
Me: “Market khatam nahi hota.” “Market share badalta hai.”
Some days… You come home tired. Delivery wins.
Sunday family lunch? Home kitchen wins.
Celebrating something? Restaurant wins.
Busy workday? Meal subscription wins.
“It’s not one winner.”
“It’s different winners… for different situations.”
She nodded.
“Matlab race khatam nahi hui…”
“Bas…” ”…plate mein hissa badalta rehta hai.”
Exactly. “Aai, ye sirf khaane ki kahani nahi hai. Market mein bahut baar aisa hi hota hai.”
In the end, markets don’t eliminate choices. They simply change how often we choose them.
